
Summer Watermelon Mojito
Clear your calendar. Summer in a glass is coming your way!
When I think of fruity tropical drinks, I think RUM. And when I think of summer fruits, I think WATERMELON. So when I get to thinking and concocting in my head, the basic math side of my brain tells me that RUM + WATERMELON = WATERMELON MOJITO! (Check my math on that, okay?)

Whatever your plans are for today, cancel them. Run to the store. Grab some watermelon, chop it up, and stick it in the freezer. Then you can pull it out when you are ready to suck down create these dangerously delightful Summer Watermelon Mojitos! All you have to do is throw everything in a blender–you’re bartending Jimmy Buffet style.

If you want a little fizz, add some club soda. THIS should be the biggest decision you make today.
This recipe will make 2 large mojitos or 4 normal-person sized mojitos. Choose gluttony. That way you don’t have to leave your chair for refills.

Summer Watermelon Mojito (for 4)
INGREDIENTS
- 6 cups seedless watermelon, frozen*
- 8 large mint leaves (plus more for garnish)
- ¼ cup powdered sugar (or less if your melon is really sweet)
- ¾ cup (6 ounces) light rum
- ⅔ cups freshly squeezed lime juice (about 5 juicy limes, plus more for garnish)
- club soda (optional)
*Place the watermelon cubes in a single layer on a baking sheet and freeze until solid (at least 2 hours).
Add ingredients to a blender; process until smooth, about 10-20 seconds. Divide the mixture evenly among 2 4 glasses. Top with a swirl of club soda (optional) and garnish with lime and mint, if desired.
