This mojito recipe varies from a typical mojito because you are subbing sparkling rosé in place of club soda. Just thinking about this cocktail’s effervescence makes me a bit loopy. You will lose your mind over its deliciousness!
The key is choosing bubbly rosé for this recipe. Typically, club soda adds the zip to a mojito. So if you are replacing the club soda with rosé, you’ll want to grab the zippy one. Choose carefully: some rosés are still, some are semi-sparkling, and some are sparkling. They also have a range of sweetness, so select one that suits your palate. My strawberries were super juicy + sweet, so I used a semi-dry rosé. If you choose a sweet wine, you may decide to opt out of the teaspoon of sugar. Taste your fruit, then taste your wine. Then decide on the amount of sugar you want to add.
I whipped up

Sparkling Strawberry + Rosé Mojito (for 2)
- 2+ ounces freshly squeezed lime juice
- 2 rounded teaspoons superfine sugar or 2 ounces simple syrup
- 8 large fresh mint leaves (for drink and for garnish)
- 8 plump + ripe medium-sized strawberries, quartered (reserve 2 for garnish)
- 4 ounces white rum
- 2 cups crushed ice
- 4 ounces rosé
In the bottom of a cocktail shaker, stir together lime juice + sugar until sugar dissolves. Add 6 mint leaves + the 6 sliced strawberries; muddle them into the lime juice. Add a little ice and rum; shake for 15-20 seconds or until shaker becomes frosty. Pour into two glasses of ice. Top with rosé; swirl, and garnish with mint.
