Imagine a mountain of creamy, starchy mashed potatoes piled high with sour cream, cheese, bacon and green onions. I mean really loaded with all that tasty goodness. Well, let me introduce you to my Loaded Baked Potato Dip that I liken to eating a loaded baked potato, one spoonful chip at a time.

Because it is hearty and thick, you need a sturdy chip. Herculean, if you will. Waffle fries are quite suitable for the job. (Hence, the loaded potato.) But if you are looking for an actual chip for your dip, grab a bag of pretzel chips, pita chips, or bagel chips, all which pass the chipwreck specs. You want a real potato chip? Grab a bag of Lay’s Wavy chips. According to the Denver Post, Wavy Lay’s Potato Chips boast “great taste, excellent dipability.” Good to know.
Heck, use a spoon and eat it straight from the bowl for all I care. Who am I to judge. Live your life.
If you are looking to shave off a few calories or accommodate dietary restrictions, you can sub turkey bacon and low fat sour cream. Use baby carrots as scoops, yet,another sturdy selection which will not leave you fishing around the dish, scrambling for a broken chip. NO ONE WANTS THAT.

Loaded Baked Potato Dip
Ingredients
- 8 ounces sour cream
- 1 cup sharp cheddar cheese, grated
- 8 slices bacon, cooked to a crisp and crumbled
- 4 green onions, thinly sliced
- 1 teaspoon salt
- ½ teaspoon coarse black pepper, freshly ground
- a shake of hot sauce
Directions
- Combine sour cream, cheddar cheese, onions, and S&P in a mixing bowl.
- Fold bacon crumbles into mixture.
- Garnish and serve with chips, fries, carrots, pretzels or pitas.
